Today I attended the 3rd International Chocolate Symposium.  the symposium is a gathering of chocolate professionals organised by chocolate producer Belcolade.  It is a very interesting symposium with international speakers and different items such as new trends in chocolate products, foodpairing with chocolate, berryfruit and walnuts and chocolate in the aging brain, The most delicious bonbon of the Netherlands and more.

There were possibilities to taste different pralines and chocolate which gives an insight in different products to use for praline creation.  It is definately worth a visit next year if you are a chocolate professional.

Practical test – The musselpot

I hope everyone had a good Easter vacation ?  After 2 weeks vacation I am back with some new art pieces.

Today was the practical test.  The goal was to make a chocolate piece of choice.  The chocolate piece should also be used for the paper I have to make about chocolate.  I made some general pictures and I also present the objects my collegues produced.

From now on my practical lessons are over.  The only thing that rests is doing the theoretical test and finishing my written essay.  Then in june I have to defend my essay in front of a jury.  I hope I make it.

Meanwhile I will keep on posting chocolate creations that I make.

“The musselpot” in chocolate

I have to make an object in chocolate for my upcoming practical exam.  As object, I have chosen to make a chocolate “Musselpot”.  I came onto the idea when I saw “The Musselpot” from Marcel Broodthaers that has been exhibited by the S.M.A.K in Gent, Belgium.

The musselpot consists of a bottom and a top lid in dark chocolate.  It has the form of a real musselpot.  Inside the musselpot you will find fruits de mer in milk and fondantchocolate – in fact all mussels.  I can create the musselpot in a few hours which give me time to put everything togheter and time to finish it properly.  Keep in mind that this is only a test version.  The exam version will be perfect or should at least.

The link between mussels comes from he French word “Moule”, which also means plastic for making pralines or other forms.

The next 2 weeks I am on vacation so I don’t think I will post, perhaps some creations I make for testing purposes.

Visit @ Nougat Vital in Nevele

I was up early since I had the authorisation to visit a nougat factory in my neighbourhood.  The factory is named Vital and it has been a family business since 1926.  They create very tasty nougat bars with almonds and other nuts like pistachenuts.  They also create granulated nougat for other purposes and nougat cream which not only smells delicious but also tastes incredible good.

I got good company and a walk through the plant.  I followed the production process which gave me more information on how nougat is being made.  Ofcourse, the recipe to make them so tastefull is a little secret.
