Knowledge test

Today I had examination of the knowledge I already gained the last 8 weeks. It is mandatory to pass the tests from the first module before I can continue to the second module. The test consist of two things, a theoretical and a practical part.

I finished the theoretical part with 48 on 50 points. The practical test consisted in putinng chocolate on the right temperature, make pralines with a filling and garnish them with something. For this part i had 44 on 50. In total i had 92 points on 100 which ain’t that bad for a starter.

First Pralinee filling

Wednesday, October 7th 2007.

Today was the last lesson before the exams. What was on the menu ? Well, it was pralinee filling for chocolates.
I give you the recipe here in short :
Ingredients :
- 500 grams Hazelnutpaste / almond paste
- 250 grams milkchocolate + secret addition
Howto :
- Prepare your chocolate
- Mix all togheter and prepare the mixed solution
- Put it on a table on bakingpaper and make a plate 1cm thick
- Let it become hard in the freezer
Next :
- Give a bottom of chocolate to the solution and turn around
- Cut it out in pieces 2cm by 3cm or stick it out.
- Then put a cover of chocolate around it and then garnish with fondant chocolate

Although I still need some training on the garnishing.

Pralinee filling

Chocolate Marachino cherries

Last saturday I tried to make some different things. First of all I tried to make Fondant chocolates with nuts which worked very well. I don’t have a picture of it since they have been eaten already. The other thing I tried was making chocolates with marachino cherries. It works well and tastes very good. The only problem is that the cherries have a lot of fluid in them and this is being released when the chocolate dries.

Lucky on Ebay

Yesterday I was lucky on Ebay.  I won an auction for egg moulds.  I just wanted them because it’s fun to play around a bit with this kind of moulds.  The price was reasonable, I payed 16 euro, which was far away from the bid i did some time ago for other moulds.  They went up till 61 euro.  Wel, time to do some things.
