Truffles and how to make them

The lesson today was very interesting, a recipe to make truffles. It is very easy to make truffles as long you respect some things in the process.

What do you need ?
- 1/2 kilo of Butter
- 1/2 kilo of Fat
- 1/2 kilo of Fondant sugar
- 200 grams of praliné
- 1 Kilo of chocolate of choice

Mix all togheter to a nize mass. Then you cover the mass with chocolate and you throw em in chocolate slices and you are done. Here is the result of my truffles making lesson :

Saturday, October 20th.

I felt it this morning, I wanted to make some chocolates. Whenever I think about chocolate I feel like making them. Testing things, checking out, tasting and more more more more ….

Today I made the rice crips chocolate and student chocolates. The result ain’t perfect again but I have time to learn and get better. The results are beneath.

Making Pralines and finishing them

Wednesday, October 17 th

Finally some of the mystic things of making pralines comes to the surface. Today we were going to cover pralines with chocolate. Actually, it’s putting a small layer of chocolate on what you want to make. And ofcourse after doing this, you have to finish the praline with some design of chocolate. This is the result :

Nuts, Almonds, rice crisps and nuts

Wednesday, October 10th 2007.

It was the time to make some more interesting things. Chocolate with rice crisps, chocolate with almond and other nuts. Wunderbar ! It’s amazing what you can do with chocolate and how the taste is afterwards. This is the result of lesson 4 :

Meanwhile I did a bid on some iron moulds with flower prints on Ebay. I hope I win the auction since this stuff is pretty expensive if you have to buy it new.

Experimenting with chocolate at home

Monday, October 8th 2007. I bought some stuff to experiment at home.
Two bags of chocolate, one milk chocolate and the other dark chocolate.

Butter/bakepaper, some moulds to make differents forms (seaanimals, bears and corn). After preparing the chocolate to get a good temperature I moulded the stuff. The result looks ok but not perfect yet.

Last friday morning I requested a catalogue with all different moulds at a company here in Belgium. Fortunately they were so happy to help me out that the catalogue already went on the snailmail on friday afternoon. Today I received the cdrom with the catalogue. Sunday “Open bedrijvendag” in Belgium

Sunday, October 7th 2007.

Today I went visiting a chocolate factory for the occasion of “Open bedrijvendag”. “Open Bedrijvendag” means that some companies open their doors for visitors. Only this one sunday of the year they were opened. So I headed there with my girlfriend to do a checkup of what is happening in a chocolate factory.

The company I went to was : “Debailleul”. They develop and manufacture chocolade, pastry and ice cream. The stuff that interested me was chocolate ofcourse. It’s worth the visit.

First contact with chocolate

Wednesday, october 3rd 2007.

Today it’s the first real contact with chocolate. The lesson is about preparing chocolate for production. There are some parameters that have to be in order to work with chocolate. Temperature, liquidness and crunchiness … in fact it is all important.
