September 19th I started a course at Syntrawest in Kortrijk to become a chocolate adaptor according to traditional methods.
I had to get some specialised material such as pants, vest, hat and towels to protect myself from getting dirty and ofcourse some other tools to work with chocolate. According to the law the tools need to have specifications according to the HACCP rules. Buying the correct tools to work with is half of the start.
Meanwhile I had my first course and my second course which was all theoretically. No need to say that you need the basic knowledge about chocolate before you can start.
